Each morning Country Willows Chef Hayden is up bright and early preparing one of his delicious, three-course gourmet breakfasts. Many of the ingredients are sourced from Country Willows own organic garden and local farmers markets.
Here is a guest favorite you can enjoy right at home!
Passionfruit Mousse (Makes about 10 servings)
Ingredients:
• 1/3 cup Passionfruit puree, plus more for top
• 2 cups heavy cream
• 1 10 oz can sweetened condensed milk
• 2 tbsp lemon juice
• 2 tsp powdered gelatin
• 3 tbsp water
Directions:
- In the bowl of a stand mixer, add the Passionfruit, cream, Sweetened condensed milk, and lemon juice. Mix on medium low speed until combined, making sure to use a spatula to scrape the sides.
- In a small pot, add your gelatin and water, letting the gelatin hydrate for a couple minutes, then heat the mixture over medium low heat until gelatin is completely melted.
- Slowly add the melted gelatin to the passionfruit mixture while mixing on medium speed until all the gelatin is mixed in.
- Transfer the mousse mixture to a large bowl or a bunch of small bowls, wrap with plastic wrap and let chill a minimum of four hours, or ideally overnight. Serve with extra passionfruit puree over the top.
