House Made Gluten-Free and Vegan Granola
Each morning Country Willows Chef Hayden is up bright and early preparing one of his delicious, three-course gourmet breakfasts. Many of the ingredients are sourced from Country Willows own organic garden and local farmers markets. If the Chef's Daily Special is not to your liking, there's always house made gluten-free and vegan granola available as an alternate breakfast option.
Ingredients:
- 6 cups gluten-free oatmeal
- 1 cup slivered almonds
- 1 cup chopped pistachios
- 1/2 tbsp cinnamon
- 1 tsp salt
- 1/4 cup flaxseed
- 3/4 cup maple syrup
- 1/2 cup coconut oil
- 1 cup shredded coconut
- 1 cup Craisins
- 1 cup chopped dried apricots
- 1/4 cup chia seed
Directions:
- Preheat oven to 325.
- Combine oatmeal and flax seed in a large bowl.
- In a measuring cup combine the maple syrup and coconut oil.
- Add the syrup mixture to the oatmeal and flax seed. Stir until coated.
- Spread evenly onto oiled sheet tray.
- Bake 13 minutes.
- Stir on tray and bake another 13 minutes.
- Stir in coconut and bake 5 minutes longer.
- Remove from oven and add remaining ingredients. Serve with fresh fruit and yogurt!
